Thanks guys!!

Nick- I've actually never tried the extra sweet frozen corn, though I always buy the best organic brand I can find, I always assumed the extra sweet would be like candy! Next time I'll get it for sure!

Ann- Ha! I didn't even know it was a Nigel Slater recipe. Cool! And yes, I think its all about preference when you're eating veggies... though I have to say I looooooved these veggies reheated and eaten with a bit of rice!

Oh no way! You made my chicken :-) The mooshie vegetables are a love-em or hate-em thing. We're a mooshie vege household, can't you tell! I think you could probably do them another way too, like put them in at the end or cook them separate or just cook the chicken on some halved onions for flavor! The recipe is actually adapted from one by Nigel Slater that I adapted which Izzy's Mama then adapted and then you adapted it again! How amazing is that, the lifelines of a recipe? I'm so glad you're back, and honored by your kind words :-) Thanks Robin, you're a doll!!

Yes, this looks great! When you buy frozen corn, spend a little extra and buy the "extra sweet white corn". Even the store brand version of this is a huge leap over regular frozen corn which can sometimes have almost no flavor at all. And canned corn is the worst contender from my experience.

I just bought polenta for the first time ever the other day. I'd been meaning to try it for a while but just never did. Now I have something for it to go with! I think it's basil and garlic flavored (or something similar), so it should go nicely with a roast chicken!

Glad your vacation didn't last long ;)
My grandmother used to make pot roasted chicken, too. Although she would brown the chicken first in some butter then cook it, and without the veggies. I am with you on the veggies: caramelized or mashed potatoes.
Love Ann's recipe as well. No fuss and comforting!

I am at a total loss as to why that chicken was covered with frozen corn. ????

I rarely, if ever, fail to grasp concepts, but you sure have me here.
