Hi Robin,
Just wanted to let you know we stopped by the Podere di Melo Farm on Sunday thanks to your reccomendation. What nice people! We got a tour and got to see how they raise everything. We came away with a duck for now but plan on getting more as more becomes available.

Thanks for the info on the farm - it is so nice to find out about local places like that.

No lid on in the oven, during the roasting, but Yes, lid on on stove-top for braising. I used a dutch oven for the roasting because it was easy to transport onto the stovetop and has high sides to help stop the splattering fat.

And thank you for saying hello!!

I've always thought of duck as an Asian or European thing. I've never thought about buying from local purveyors. I'm done with frozen duck for now I think.

Wow that looks fantastic! I've had homemade sauerkraut fermenting in my bedroom closet for the past month and am tempted to make another batch just for this!

I just love duck, too, and have only found one recipe that's foolproof (amanda hesser's ginger duck on my site). This looks just great, and I'm going to try that sauerkraut.

Man my hubby would love that dish, and I like how you have the cabbage so creatively hanging off its legs. Duck fat is great to save and use for other dishes...

Ooo duck fat. I have heard it's great for potatoes and it seems you agree. Can't wait to taste my own of these days.

Jim swam in it yesterday; he sat on the rock in the middle of the river, closed his eyes and smiled, letting the current rush around him.

I look at that and think... how far his life once was from that serenity, from that bliss of a life where one is fully engaged in nature and in silence and in one's self... he gives me hope that I will get back there one day too.
