It's so sad now though, that so many restaurants are ruined in our eyes because their meat <i>just don't taste as good!</i> The sauce is a really good riff on the apples and pork thing. It doesn't take any time at all to adjust to the difference in color and flavor as opposed to commercially raised, but the cost does take some getting used too. You gotta love a good butt.
