Glad to know there are others who feel like sea urchin is like being transported to sensual ecstasy by way of the ocean. But..in the ingredients list I am at a loss to see the quantity of pasta required to make for this recipe. I made this recipe at home with the original 2oz. dried pasta as suggested in Ripert's book and it seemed like way too much sauce for amount of pasta. Also, I think it needed more water to thin the sauce down to drizzle consistency.

This was excellent and easy!! There is no need to alter anything, all the flavours come thru, just fresh urchin, good cheese and juicy lemon and chive and caviar. The butter disappears and it tastes fresh, balanced and not overly rich.

My absolute favorite sushi (& like you it was my introduction to sea urchin) is gunkan maki, with sea urchin and raw quail egg on top.

I haven’t recalled my one-and-only meal at Nobu Next Door until today. Thanks for the recollection. :) This recipe looks luxurious---a perfect treat with which to celebrate a new year. Happy 2010!

It doesn't make much food--only 2 oz of pasta--so I think it would be a great meal to eat alone. The sight might even entice your husband. :)
